I recently rediscovered this steamed black bean spareribs recipe that I used to cook years ago, when my family was small and I had more time to experiment in the kitchen. The renewed interest was inspired by this Hong Kong style sparerib recipe.
Steamed spareribs are easy and convenient for busy households. The meat is prepared ahead of time, and left to marinate in the fridge. In the morning, simply cook in a steamer while you go about your other tasks before sending the kids off to school.

Here’s something new that I’ve been doing since school started two weeks ago – menu planning! Yup, in my almost 16 years of motherly existence, this is the first time that I’m actually planning meals seriously.
The kids, being older and wiser, just won’t settle for alternating fried egg and tocino breakfasts now. Adobo lunch boxes don’t excite them anymore either. To make sure the menu doesn’t get tiring, we thought of planning the meals.

Since Nate is off chicken, my two other kids get usually get their chicken fix in their school lunch. Kawawa naman if we have chicken at home while Nate watches on, di ba? 🙁 Here’s a quick and easy baked chicken recipe that’s great for baon.
Last Tuesday, the girls had Baked Herb-Chicken Thighs. It is one of the lunch box mainstays, because it’s so easy and quick to cook. It’s a flexible recipe too, as you can throw in any flavors you want into the marinade.
I use chicken legs or thighs, instead of whole chicken because nobody wants to eat the breast part in this family. So I always end up eating it! To be fair to everyone (especially to myself, hehe, I decided – only chicken legs!)

My first experiment on Cheese and Sausage Meatloaf was a hit with my 3 biggest fans – Patchy, VGood and Hub (lol, who else??) – except that there was a lot of meat juices (“nag sabaw”). On my second attempt, I drained the ground meat well before mixing it with the other ingredients. This seemed to do the trick.
This cheese and sausage meatloaf is fuss-free , can be prepared ahead of time, tastes good whether warm or cold, and makes for great school lunch (baon).
Plus it’s a sneaky way to disguise fiber – there’s a cupful of oatmeal in there! Leftovers also make great sandwich fillers.
And because I used oatmeal instead of wheat flour, this is a gluten free meatloaf recipe!
